Haipai Hotpot (海派火锅)

Ingredients
- 500g thinly sliced beef
- 300g fresh shrimp
- 400g assorted mushrooms
- 300g tofu, cut into cubes
- 200g napa cabbage, chopped
- 150g glass noodles
- 1 bunch scallions, chopped
- 4 cups chicken or beef broth
- 1/2 cup soy sauce
- 1/4 cup rice wine
- 2 tbsp Sichuan peppercorns
- 4 cloves garlic, minced
- 2-inch piece ginger, sliced
- 1 tsp sugar
- 1 tsp sesame oil
- 1 tsp chili oil
Instructions
- In a large pot, bring the broth to a simmer over medium heat.
- Add the soy sauce, rice wine, Sichuan peppercorns, garlic, ginger, and sugar to the broth. Let it simmer for 10 minutes to infuse the flavors.
- Add the beef, shrimp, mushrooms, tofu, and napa cabbage to the pot. Cook for 5-8 minutes until the ingredients are cooked through.
- Add the glass noodles and scallions to the pot. Cook for an additional 3-5 minutes until the noodles are tender.
- Stir in the sesame oil and chili oil. Adjust the seasoning to taste.
