Ingredients

  • 500g thinly sliced beef
  • 300g fresh shrimp
  • 400g assorted mushrooms
  • 300g tofu, cut into cubes
  • 200g napa cabbage, chopped
  • 150g glass noodles
  • 1 bunch scallions, chopped
  • 4 cups chicken or beef broth
  • 1/2 cup soy sauce
  • 1/4 cup rice wine
  • 2 tbsp Sichuan peppercorns
  • 4 cloves garlic, minced
  • 2-inch piece ginger, sliced
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 tsp chili oil

Instructions

  1. In a large pot, bring the broth to a simmer over medium heat.
  2. Add the soy sauce, rice wine, Sichuan peppercorns, garlic, ginger, and sugar to the broth. Let it simmer for 10 minutes to infuse the flavors.
  3. Add the beef, shrimp, mushrooms, tofu, and napa cabbage to the pot. Cook for 5-8 minutes until the ingredients are cooked through.
  4. Add the glass noodles and scallions to the pot. Cook for an additional 3-5 minutes until the noodles are tender.
  5. Stir in the sesame oil and chili oil. Adjust the seasoning to taste.
