Ingredients
- 1 pound pork tenderloin, cut into thin strips
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 cup pineapple chunks
- 1/2 cup sugar
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
Instructions
- In a bowl, coat the pork strips with cornstarch, then dip them into the beaten eggs.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the pork strips until golden brown and crispy. Remove and set aside.
- In the same skillet, sauté the bell peppers and pineapple chunks until slightly tender.
- In a small bowl, mix the sugar, ketchup, rice vinegar, soy sauce, sesame oil, and minced garlic. Pour the mixture into the skillet with the peppers and pineapple.
- Bring the sauce to a simmer, then add the cornstarch mixture. Stir until the sauce thickens.
- Add the crispy pork back into the skillet and toss to coat with the sweet and sour sauce.
- Serve the Haipai Sweet and Sour Pork hot with steamed rice.
