Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup pineapple chunks
  • 1 bell pepper, cut into chunks
  • 1/2 cup sugar
  • 1/4 cup rice vinegar
  • 3 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening the sauce)

Instructions

  1. Coat the shrimp in cornstarch, then dip in beaten eggs.
  2. Heat vegetable oil in a pan and fry the shrimp until golden brown. Set aside.
  3. In the same pan, sauté ginger and garlic until fragrant.
  4. Add pineapple chunks and bell pepper, and cook until slightly softened.
  5. In a bowl, mix sugar, rice vinegar, ketchup, and soy sauce to make the sweet and sour sauce.
  6. Pour the sauce into the pan and bring to a simmer.
  7. Add the fried shrimp back into the pan and stir to coat with the sauce.
  8. Stir in the cornstarch mixture to thicken the sauce.
  9. Serve the Haipai Sweet and Sour Shrimp hot, garnished with green onions if desired.
