Ingredients
- 1 cup jasmine rice
- 6 cups chicken or seafood broth
- 1 cup mixed seafood (shrimp, squid, and scallops)
- 1/2 cup shiitake mushrooms, sliced
- 1/4 cup green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, bring the broth to a boil.
- Rinse the jasmine rice and add it to the boiling broth. Reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
- Add the mixed seafood, shiitake mushrooms, green onions, garlic, and ginger to the pot. Cook for an additional 20 minutes, or until the rice has broken down and the congee has reached a creamy consistency.
- Stir in the soy sauce, sesame oil, salt, and pepper. Adjust seasoning to taste.
- Serve the Haitang Zhou hot, garnished with extra green onions and a drizzle of sesame oil.
