Haitian Bouillon

Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 leek, sliced
  • 1 cup cabbage, shredded
  • 1 cup spinach, chopped
  • 1 scotch bonnet pepper, whole
  • 1 cup malanga, diced
  • 1 cup yam, diced
  • 1 cup plantains, sliced
  • 1 cup cassava, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup green onions, chopped
  • 1 tsp thyme, dried
  • 1 tsp cloves, ground
  • 1 tsp black pepper
  • 1 tsp salt
  • 8 cups chicken broth

Instructions

  1. In a large pot, brown the chicken pieces over medium heat for 5 minutes.
  2. Add the onions and garlic, and cook for another 3 minutes.
  3. Add the carrots, potatoes, leek, cabbage, spinach, scotch bonnet pepper, malanga, yam, plantains, cassava, parsley, green onions, thyme, cloves, black pepper, and salt. Stir to combine.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the chicken is cooked through and the vegetables are tender.
  6. Remove the scotch bonnet pepper before serving.
