Haitian Bouillon
Haitian bouillon is a flavorful and hearty soup that is a staple in Haitian cuisine. It is a one-pot meal that is perfect for feeding a crowd or for enjoying as leftovers throughout the week.
Ingredients
- 2 lbs chicken, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 leek, sliced
- 1 cup cabbage, shredded
- 1 cup spinach, chopped
- 1 scotch bonnet pepper, whole
- 1 cup malanga, diced
- 1 cup yam, diced
- 1 cup plantains, sliced
- 1 cup cassava, diced
- 1/4 cup parsley, chopped
- 1/4 cup green onions, chopped
- 1 tsp thyme, dried
- 1 tsp cloves, ground
- 1 tsp black pepper
- 1 tsp salt
- 8 cups chicken broth
Instructions
- In a large pot, brown the chicken pieces over medium heat for 5 minutes.
- Add the onions and garlic, and cook for another 3 minutes.
- Add the carrots, potatoes, leek, cabbage, spinach, scotch bonnet pepper, malanga, yam, plantains, cassava, parsley, green onions, thyme, cloves, black pepper, and salt. Stir to combine.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the chicken is cooked through and the vegetables are tender.
- Remove the scotch bonnet pepper before serving.
