Haitian Style Beef Patties (Pate Kòd)

Ingredients
- 2 cups all-purpose flour
- 1/2 cup butter, chilled and diced
- 1/2 cup water
- 1 lb ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and diced butter. Use your fingers to rub the butter into the flour until it resembles breadcrumbs.
- Add water gradually and knead the dough until it comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In a skillet, cook the ground beef, onion, and garlic until the beef is browned. Add thyme, paprika, salt, and pepper. Let the filling cool.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface and cut out circles using a round cutter.
- Place a spoonful of the beef filling in the center of each circle, fold the dough over the filling, and crimp the edges with a fork to seal.
- Place the patties on a baking sheet and bake for 20-25 minutes or until golden brown.
