Hakka Chilli Chicken

Ingredients
- 500g boneless chicken, cut into cubes
- 2 tbsp soy sauce
- 1 tbsp red chili sauce
- 1 tbsp vinegar
- 1 tsp ginger, finely chopped
- 1 tsp garlic, finely chopped
- 1 onion, diced
- 1 bell pepper, diced
- 2 green chilies, slit
- 2 tbsp cornflour
- 1/4 cup water
- Salt to taste
- Oil for frying
Instructions
- In a bowl, mix the chicken with soy sauce, red chili sauce, vinegar, ginger, and garlic. Let it marinate for 15 minutes.
- In a separate bowl, mix the cornflour with water to make a slurry.
- Heat oil in a pan and fry the marinated chicken until golden brown. Remove and set aside.
- In the same pan, add a little more oil if needed and sauté the onions, bell peppers, and green chilies.
- Add the fried chicken back to the pan and pour the cornflour slurry over it. Stir well to coat the chicken and vegetables.
- Cook for a few more minutes until the sauce thickens and coats the chicken evenly.
- Serve hot with steamed rice or noodles.
