Ingredients

  • 3 cups cooked rice
  • 2 salted duck eggs, yolks mashed
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 2 green onions, chopped
  • 2 tablespoons cooking oil

Instructions

  1. Heat cooking oil in a wok or large skillet over medium heat.
  2. Add minced garlic and diced onion, stir-fry until fragrant.
  3. Add mixed vegetables and continue to stir-fry for 2-3 minutes.
  4. Push the vegetables to the side of the wok, add the mashed salted duck egg yolks to the center, and stir-fry for 1 minute.
  5. Add cooked rice to the wok, breaking up any clumps, and mix well with the vegetables and eggs.
  6. Drizzle soy sauce, oyster sauce, and sesame oil over the rice. Sprinkle white pepper and stir-fry for another 2-3 minutes.
