Ingredients

  • 1 lb beef, thinly sliced
  • 8 oz dried noodles
  • 2 tbsp Sichuan peppercorns
  • 3 tbsp chili bean paste
  • 4 cloves garlic, minced
  • 2-inch piece ginger, sliced
  • 4 green onions, chopped
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • 6 cups beef broth
  • Salt, to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the Sichuan peppercorns, garlic, and ginger. Cook until fragrant.
  2. Add the beef slices and cook until browned.
  3. Stir in the chili bean paste, soy sauce, and sugar. Cook for 2-3 minutes.
  4. Pour in the beef broth and bring to a boil. Reduce heat and simmer for 30-40 minutes.
  5. While the beef is simmering, cook the noodles according to the package instructions. Drain and set aside.
  6. Once the beef is tender, season with salt to taste.
  7. To serve, divide the noodles into bowls and ladle the spicy beef broth over the noodles. Garnish with chopped green onions.
