Ingredients
- 1 lb beef, thinly sliced
- 8 oz dried noodles
- 2 tbsp Sichuan peppercorns
- 3 tbsp chili bean paste
- 4 cloves garlic, minced
- 2-inch piece ginger, sliced
- 4 green onions, chopped
- 3 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp vegetable oil
- 6 cups beef broth
- Salt, to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the Sichuan peppercorns, garlic, and ginger. Cook until fragrant.
- Add the beef slices and cook until browned.
- Stir in the chili bean paste, soy sauce, and sugar. Cook for 2-3 minutes.
- Pour in the beef broth and bring to a boil. Reduce heat and simmer for 30-40 minutes.
- While the beef is simmering, cook the noodles according to the package instructions. Drain and set aside.
- Once the beef is tender, season with salt to taste.
- To serve, divide the noodles into bowls and ladle the spicy beef broth over the noodles. Garnish with chopped green onions.
