Ingredients

  • 1 lb beef brisket, sliced
  • 4 bundles of dried wheat noodles
  • 3 tbsp Sichuan peppercorns
  • 4 dried red chilies
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2-inch ginger, sliced
  • 1/4 cup soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 6 cups beef broth
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large pot, dry roast the Sichuan peppercorns and dried red chilies until fragrant. Remove and set aside.
  2. Heat some oil in the same pot and brown the beef slices. Remove and set aside.
  3. Saute the onion, garlic, and ginger until fragrant. Add the roasted Sichuan peppercorns and dried red chilies back to the pot.
  4. Pour in the soy sauce, dark soy sauce, Shaoxing wine, and sugar. Stir to combine.
  5. Add the browned beef slices back to the pot and pour in the beef broth. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  6. Cook the wheat noodles according to package instructions.
  7. To serve, place a portion of noodles in a bowl and ladle the braised beef and broth over the noodles. Garnish with chopped green onions.
