  • 200g dried noodles
  • 2 tablespoons vegetable oil

  • 1 tablespoon Sichuan peppercorns
  • 2 tablespoons chili bean paste
  • 1 tablespoon soy sauce
  • 1 tablespoon black vinegar
  • 1 teaspoon sugar
  • 4 green onions, chopped
  • Salt to taste

Instructions

  1. Boil the noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a wok or large skillet over medium heat. Add the garlic and Sichuan peppercorns, and stir-fry until fragrant.
  3. Add the chili bean paste to the wok and stir-fry for another minute.
  4. Stir in the tofu, soy sauce, black vinegar, and sugar. Cook for 3-4 minutes, allowing the flavors to meld.
  5. Add the cooked noodles to the wok and toss to combine with the tofu and sauce.
  6. Season with salt to taste and garnish with chopped green onions.
