Ingredients
- 300g firm tofu, cut into cubes
- 200g dried noodles
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon Sichuan peppercorns
- 2 tablespoons chili bean paste
- 1 tablespoon soy sauce
- 1 tablespoon black vinegar
- 1 teaspoon sugar
- 4 green onions, chopped
- Salt to taste
Instructions
- Boil the noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a wok or large skillet over medium heat. Add the garlic and Sichuan peppercorns, and stir-fry until fragrant.
- Add the chili bean paste to the wok and stir-fry for another minute.
- Stir in the tofu, soy sauce, black vinegar, and sugar. Cook for 3-4 minutes, allowing the flavors to meld.
- Add the cooked noodles to the wok and toss to combine with the tofu and sauce.
- Season with salt to taste and garnish with chopped green onions.
