Hakka Stuffed Lotus Leaf Rice (客家荷叶饭)
客家荷叶饭 (Hakka Stuffed Lotus Leaf Rice) is a traditional dish from Hakka Cuisine that features savory sticky rice stuffed with flavorful ingredients and steamed in lotus leaves.
Ingredients
- 2 cups sticky rice
- 6 dried lotus leaves
- 200g pork belly, diced
- 6 dried shiitake mushrooms, rehydrated and diced
- 1/2 cup dried shrimp, soaked and chopped
- 4 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp white pepper
- 1/4 cup chopped scallions
Instructions
- Soak the sticky rice in water for 2 hours, then drain.
- Soak the dried lotus leaves in water until they are pliable, then pat dry.
- Heat a pan over medium heat and cook the pork belly until browned. Add the garlic, mushrooms, and shrimp, and cook until fragrant.
- Stir in the soy sauce, oyster sauce, sesame oil, and white pepper. Add the sticky rice and scallions, and mix well.
- Divide the rice mixture into 6 portions. Place each portion onto a lotus leaf, then fold and secure the leaf to form a packet.
- Steam the packets for 1 hour.
- Unwrap the lotus leaves before serving.
