Ingredients
- 1 whole duck, chopped into pieces
- 5 slices ginger
- 3 cloves garlic, minced
- 2 star anise
- 1 cinnamon stick
- 3 dried red chilies
- 1/2 cup soy sauce
- 1/4 cup dark soy sauce
- 1/4 cup rice wine
- 3 cups water
- 1/4 cup brown sugar
- Salt to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the ginger, garlic, star anise, cinnamon stick, and dried red chilies. Sauté until aromatic.
- Add the duck pieces to the pot and brown them on all sides.
- Pour in the soy sauce, dark soy sauce, and rice wine. Stir in the water and brown sugar. Bring to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the duck is tender.
- Season with salt to taste. Serve the braised duck hot with steamed rice.
