Ingredients
- 1 pound fresh green beans, ends trimmed
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 3 tablespoons cooking oil
Instructions
- Blanch the green beans in boiling water for 2 minutes, then transfer to an ice bath to stop the cooking process. Drain and pat dry.
- Heat the cooking oil in a wok or large skillet over high heat. Add the green beans and stir-fry for 4-5 minutes until they start to blister and char.
- Push the green beans to the side of the wok, add a little more oil if needed, then sauté the garlic and chilies until fragrant.
- Return the green beans to the center of the wok, add soy sauce, sugar, and salt. Stir-fry for another 1-2 minutes.
- Transfer to a serving dish and serve hot.
