Hakka Yong Tau Foo Fiesta

Ingredients
- 6 pieces of bitter gourd, halved and deseeded
- 6 pieces of tofu puffs
- 1 cup of green beans, trimmed
- 1 cup of okra, halved
- 1 cup of eggplant, sliced
- 200g of fish paste
- 200g of prawn paste
- 1 tablespoon of cornstarch
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 teaspoon of sesame oil
- 4 cups of chicken broth
- Salt and pepper to taste
Instructions
- Prepare the stuffing by mixing fish paste, prawn paste, cornstarch, soy sauce, oyster sauce, and sesame oil in a bowl.
- Stuff the bitter gourd, tofu puffs, green beans, okra, and eggplant with the prepared stuffing mixture.
- In a pot, bring the chicken broth to a boil. Add the stuffed vegetables and tofu puffs, and simmer for 15-20 minutes.
- Season the broth with salt and pepper to taste.
- Serve the Hakka Yong Tau Foo hot with steamed rice or noodles.
