Hakka Yong Tau Foo Fiesta

Ingredients

  • 6 pieces of bitter gourd, halved and deseeded
  • 6 pieces of tofu puffs
  • 1 cup of green beans, trimmed
  • 1 cup of okra, halved
  • 1 cup of eggplant, sliced
  • 200g of fish paste
  • 200g of prawn paste
  • 1 tablespoon of cornstarch
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of sesame oil
  • 4 cups of chicken broth
  • Salt and pepper to taste

Instructions

  1. Prepare the stuffing by mixing fish paste, prawn paste, cornstarch, soy sauce, oyster sauce, and sesame oil in a bowl.
  2. Stuff the bitter gourd, tofu puffs, green beans, okra, and eggplant with the prepared stuffing mixture.
  3. In a pot, bring the chicken broth to a boil. Add the stuffed vegetables and tofu puffs, and simmer for 15-20 minutes.
  4. Season the broth with salt and pepper to taste.
  5. Serve the Hakka Yong Tau Foo hot with steamed rice or noodles.
