Ingredients

  • 1 lb sweet cheese, such as ricotta or farmer's cheese
  • 1/2 cup semolina
  • 1/2 cup sugar
  • 1/4 cup rose water
  • 1/4 cup orange blossom water
  • 1/4 cup unsalted butter
  • 12 phyllo dough sheets
  • 1/4 cup pistachios, chopped (for garnish)
  • 1/4 cup simple syrup (for drizzling)

Instructions

  1. In a mixing bowl, combine the sweet cheese, semolina, sugar, rose water, and orange blossom water. Mix well until smooth.
  2. Melt the butter in a small saucepan over low heat.
  3. Place one sheet of phyllo dough on a clean surface and brush it with melted butter.
  4. Place a spoonful of the cheese mixture at the bottom of the phyllo sheet and roll it up into a cigar shape, tucking in the sides as you roll.
  5. Repeat with the remaining phyllo sheets and cheese mixture.
  6. Place the rolls on a baking sheet and bake in a preheated oven at 350°F for 20 minutes, or until golden brown.
  7. Drizzle the rolls with simple syrup and sprinkle with chopped pistachios before serving.
