Ingredients

  • 250g halloumi cheese, sliced
  • 2 tomatoes, sliced
  • 1 red onion, sliced
  • 1 green bell pepper, sliced
  • 4 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 2 tbsp of olive oil in a pan over medium heat.
  2. Add the halloumi slices and cook for 2-3 minutes on each side until golden brown.
  3. Remove the halloumi from the pan and set aside.
  4. In the same pan, add the remaining olive oil and sauté the tomatoes, onion, and bell pepper for 5-7 minutes until softened.
  5. Season the vegetables with salt and pepper.
  6. Arrange the cooked halloumi and sautéed vegetables on a serving platter.
  7. Serve hot and enjoy!
