Ham Yu Chau Fan (salted Fish Fried Rice)

Ingredients

  • 2 cups cooked rice
  • 100g salted fish, diced
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 2 green onions, chopped

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  2. Heat the remaining 1 tablespoon of vegetable oil in the wok. Add the minced garlic and diced salted fish. Stir-fry for 2-3 minutes until the salted fish is fragrant.
  3. Add the cooked rice to the wok and stir-fry with the salted fish and garlic for 3-4 minutes.
  4. Season the fried rice with soy sauce, sugar, and white pepper. Stir to combine all the ingredients evenly.
  5. Add the scrambled eggs back into the wok and stir-fry for another 1-2 minutes.
  6. Transfer the Ham Yu Chau Fan to a serving plate and garnish with chopped green onions.
