Ham Yu Chau Fan, or Salted Fish Fried Rice, is a classic dish in Chiuchow Cuisine known for its savory and aromatic flavors. This recipe is a delicious way to enjoy the unique taste of salted fish combined with fragrant rice and other simple ingredients.
Ingredients
- 2 cups cooked rice
- 100g salted fish, diced
- 2 eggs, beaten
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
- 2 green onions, chopped
Instructions
- Heat 1 tablespoon of vegetable oil in a wok over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the wok. Add the minced garlic and diced salted fish. Stir-fry for 2-3 minutes until the salted fish is fragrant.
- Add the cooked rice to the wok and stir-fry with the salted fish and garlic for 3-4 minutes.
- Season the fried rice with soy sauce, sugar, and white pepper. Stir to combine all the ingredients evenly.
- Add the scrambled eggs back into the wok and stir-fry for another 1-2 minutes.
- Transfer the Ham Yu Chau Fan to a serving plate and garnish with chopped green onions.
