Ingredients

  • 2 cups buckwheat flour
  • 1 cup potato starch
  • 4 cups beef broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 English cucumber, julienned
  • 2 hard-boiled eggs, sliced
  • 4 slices of beef brisket, cooked and thinly sliced
  • 4 sheets of nori seaweed
  • 1/4 cup pickled radish, thinly sliced
  • 1/4 cup Asian pear, julienned
  • 1/4 cup green onion, finely chopped
  • Ice cubes

Instructions

  1. In a large mixing bowl, combine the buckwheat flour and potato starch. Gradually add water and knead the dough until smooth. Roll out the dough and cut into thin noodles. Boil the noodles for 2 minutes, then rinse with cold water and drain.
  2. In a small bowl, mix the soy sauce, rice vinegar, and sugar to make the broth. Divide the noodles into serving bowls and pour the beef broth over the noodles.
  3. Top the noodles with cucumber, hard-boiled eggs, beef brisket, nori seaweed, pickled radish, Asian pear, and green onion. Add ice cubes to the broth to keep it cold.
