Hangi Feast (maori Hangi Feast)
The Hangi Feast is a traditional Maori method of cooking that involves using heated rocks buried in a pit oven. This cooking technique imparts a unique smoky flavor to the food, making it a special and delicious meal for any occasion.
Ingredients
- 3 lbs lamb shoulder, cut into chunks
- 3 lbs chicken pieces
- 2 lbs sweet potatoes, peeled and cubed
- 2 lbs carrots, peeled and cut into chunks
- 2 lbs onions, peeled and halved
- 6 cups water
- 4 cups flour
- 2 cups milk
- 2 tsp baking powder
- Salt and pepper to taste
Instructions
- Prepare the hangi pit by digging a hole and heating the rocks.
- Season the lamb and chicken with salt and pepper.
- Layer the meat and vegetables in a large basket or wire rack.
- Place the basket in the hangi pit, cover with damp cloth and soil, and let it cook for 4 hours.
- While the hangi is cooking, prepare the dough for rewena bread by mixing flour, milk, and baking powder. Let it ferment for a few hours.
- Uncover the hangi, remove the food, and serve with rewena bread.
