Ingredients

  • 3 lbs lamb shoulder, cut into chunks
  • 3 lbs chicken pieces
  • 2 lbs sweet potatoes, peeled and cubed
  • 2 lbs carrots, peeled and cut into chunks
  • 2 lbs onions, peeled and halved
  • 6 cups water
  • 4 cups flour
  • 2 cups milk
  • 2 tsp baking powder
  • Salt and pepper to taste

Instructions

  1. Prepare the hangi pit by digging a hole and heating the rocks.
  2. Season the lamb and chicken with salt and pepper.
  3. Layer the meat and vegetables in a large basket or wire rack.
  4. Place the basket in the hangi pit, cover with damp cloth and soil, and let it cook for 4 hours.
  5. While the hangi is cooking, prepare the dough for rewena bread by mixing flour, milk, and baking powder. Let it ferment for a few hours.
  6. Uncover the hangi, remove the food, and serve with rewena bread.
