Hangzhou Dao Xiao Mian (hangzhou Noodles)
Hangzhou Dao Xiao Mian, also known as Hangzhou Noodles, is a popular dish in Zhejiang Cuisine. These hand-cut noodles are served in a flavorful broth with tender slices of meat and fresh vegetables.
Ingredients
- 500g all-purpose flour
- 250ml water
- 300g pork, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp rice wine
- 1 tsp sugar
- 1 tsp ginger, minced
- 4 cups chicken broth
- 2 cups bok choy, chopped
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour and water to form a dough. Knead the dough for 10 minutes, then cover and let it rest for 30 minutes.
- Roll out the dough and cut it into thin noodles using a sharp knife. Dust the noodles with flour to prevent sticking.
- Marinate the pork slices with soy sauce, rice wine, sugar, and ginger for 15 minutes.
- In a pot, bring the chicken broth to a boil. Add the marinated pork and cook for 5 minutes.
- Add the bok choy and green onions to the broth, and simmer for another 5 minutes. Season with salt and pepper.
- Cook the hand-cut noodles in a separate pot of boiling water for 2-3 minutes, then drain.
- To serve, divide the noodles into bowls and ladle the hot broth with pork and vegetables over the noodles.
