Ingredients

  • 1 whole duck, about 4 lbs
  • 1 cup soy sauce
  • 1/2 cup Shaoxing wine
  • 1/4 cup sugar
  • 4 slices ginger
  • 4 green onions, cut into 2-inch pieces
  • 2 star anise
  • 1 cinnamon stick
  • 1 tsp Sichuan peppercorns
  • 4 cups water

Instructions

  1. Prepare the duck by rinsing it and patting it dry with paper towels.
  2. In a large pot, combine the soy sauce, Shaoxing wine, sugar, ginger, green onions, star anise, cinnamon stick, Sichuan peppercorns, and water. Bring the mixture to a boil.
  3. Add the whole duck to the pot, making sure it is fully submerged in the liquid. Reduce the heat to low and simmer for 1.5 to 2 hours, or until the duck is tender.
  4. Remove the duck from the pot and let it rest for 10 minutes before slicing and serving.
