Hangzhou Jiang You Ya, also known as Hangzhou Soy Sauce Duck, is a traditional dish from Zhejiang Cuisine, featuring tender duck meat infused with the rich flavors of soy sauce and other aromatic ingredients.
Ingredients
- 1 whole duck, about 4 lbs
- 1 cup soy sauce
- 1/2 cup Shaoxing wine
- 1/4 cup sugar
- 4 slices ginger
- 4 green onions, cut into 2-inch pieces
- 2 star anise
- 1 cinnamon stick
- 1 tsp Sichuan peppercorns
- 4 cups water
Instructions
- Prepare the duck by rinsing it and patting it dry with paper towels.
- In a large pot, combine the soy sauce, Shaoxing wine, sugar, ginger, green onions, star anise, cinnamon stick, Sichuan peppercorns, and water. Bring the mixture to a boil.
- Add the whole duck to the pot, making sure it is fully submerged in the liquid. Reduce the heat to low and simmer for 1.5 to 2 hours, or until the duck is tender.
- Remove the duck from the pot and let it rest for 10 minutes before slicing and serving.
