Hangzhou Lu Ya (hangzhou Braised Duck)
Hangzhou Lu Ya, or Hangzhou Braised Duck, is a classic dish from Zhejiang Cuisine known for its tender and flavorful duck meat braised in a rich and savory sauce. This dish is a perfect representation of the delicate and light flavors of Hangzhou cuisine.
Ingredients
- 1 whole duck, about 4 lbs, chopped into pieces
- 3 slices ginger
- 3 green onions, chopped
- 1 cup Shaoxing wine
- 1/2 cup soy sauce
- 1/4 cup dark soy sauce
- 1/4 cup sugar
- 4 cups chicken broth
- 1 star anise
- 1 cinnamon stick
- 1 tsp Sichuan peppercorns
Instructions
- Blanch the duck pieces in boiling water for 5 minutes, then drain and set aside.
- In a large pot, sauté the ginger and green onions until fragrant.
- Add the blanched duck pieces, Shaoxing wine, soy sauce, dark soy sauce, sugar, and chicken broth to the pot. Bring to a boil.
- Reduce the heat to low, add the star anise, cinnamon stick, and Sichuan peppercorns. Simmer for 1.5 to 2 hours until the duck is tender.
- Once the duck is tender, remove it from the pot and place it on a serving dish.
- Turn up the heat and reduce the braising liquid until it thickens into a sauce. Pour the sauce over the duck pieces.
- Serve the Hangzhou Lu Ya hot with steamed rice or vegetables.
