Ingredients

  • 1 whole duck, about 4 lbs, chopped into pieces
  • 3 slices ginger
  • 3 green onions, chopped
  • 1 cup Shaoxing wine
  • 1/2 cup soy sauce
  • 1/4 cup dark soy sauce
  • 1/4 cup sugar
  • 4 cups chicken broth
  • 1 star anise
  • 1 cinnamon stick
  • 1 tsp Sichuan peppercorns

Instructions

  1. Blanch the duck pieces in boiling water for 5 minutes, then drain and set aside.
  2. In a large pot, sauté the ginger and green onions until fragrant.
  3. Add the blanched duck pieces, Shaoxing wine, soy sauce, dark soy sauce, sugar, and chicken broth to the pot. Bring to a boil.
  4. Reduce the heat to low, add the star anise, cinnamon stick, and Sichuan peppercorns. Simmer for 1.5 to 2 hours until the duck is tender.
  5. Once the duck is tender, remove it from the pot and place it on a serving dish.
  6. Turn up the heat and reduce the braising liquid until it thickens into a sauce. Pour the sauce over the duck pieces.
  7. Serve the Hangzhou Lu Ya hot with steamed rice or vegetables.
