Har Gow, or shrimp dumplings, are a classic dim sum dish in Cantonese cuisine. These delicate and translucent dumplings are filled with a savory mixture of shrimp and bamboo shoots, and are a popular choice for dim sum lovers.

Har Gow (shrimp Dumplings)

Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 1/2 cup bamboo shoots, finely chopped
  • 1/4 cup water chestnuts, finely chopped
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 teaspoon sesame oil
  • 20 round dumpling wrappers

Instructions

  1. In a food processor, pulse the shrimp until finely chopped.
  2. Transfer the chopped shrimp to a bowl and add the bamboo shoots, water chestnuts, cornstarch, sugar, salt, white pepper, and sesame oil. Mix until well combined.
  3. Place a small spoonful of the shrimp mixture in the center of a dumpling wrapper. Moisten the edges of the wrapper with water and fold it in half, pleating the edges to seal the dumpling.
  4. Repeat with the remaining wrappers and filling.
  5. Steam the dumplings in a bamboo steamer for 8-10 minutes until the wrappers are translucent and the filling is cooked through.
