Har Gow Tong (shrimp Dumpling Soup)

Ingredients

  • 1/2 pound fresh shrimp, peeled and deveined
  • 1/4 cup water chestnuts, finely chopped
  • 1/4 cup bamboo shoots, finely chopped
  • 2 green onions, finely chopped
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 1/8 teaspoon salt
  • 24 square wonton wrappers
  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon grated ginger

Instructions

  1. In a food processor, pulse the shrimp until finely chopped.
  2. Transfer the chopped shrimp to a bowl and add water chestnuts, bamboo shoots, green onions, cornstarch, sugar, sesame oil, white pepper, and salt. Mix well.
  3. Place a small spoonful of the shrimp mixture in the center of each wonton wrapper. Moisten the edges with water and fold the wrapper over the filling to create a triangle. Press the edges to seal.
  4. In a large pot, bring the chicken broth to a boil. Add soy sauce, rice vinegar, and grated ginger.
  5. Gently drop the shrimp dumplings into the boiling broth and cook for 3-4 minutes, or until they float to the surface and are cooked through.
  6. Serve the shrimp dumpling soup hot, garnished with extra green onions if desired.
