Ingredients

  • 2 cups granulated sugar
  • 1/2 cup water
  • 1/2 cup light corn syrup
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. In a heavy-bottomed saucepan, combine the sugar, water, and corn syrup over medium heat. Stir until the sugar dissolves.
  2. Once the sugar has dissolved, stop stirring and let the mixture come to a boil. Use a candy thermometer to monitor the temperature until it reaches 310°F (155°C).
  3. While the sugar mixture is boiling, in another saucepan, melt the butter over low heat. Once melted, add the heavy cream and bring to a simmer.
  4. Once the sugar mixture reaches 310°F (155°C), carefully add the butter and cream mixture. Be cautious as the mixture will bubble up.
  5. Continue to cook the caramel until it reaches 248°F (120°C). Remove from heat and stir in the vanilla extract.
  6. Pour the hot caramel into a parchment-lined baking dish and let it cool at room temperature for several hours or until completely set.
  7. Once set, use a sharp knife to cut the caramel into small pieces. Wrap each piece in wax paper to prevent sticking.
