Ingredients
- 2 cups granulated sugar
- 1/2 cup water
- 1/2 cup light corn syrup
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- In a heavy-bottomed saucepan, combine the sugar, water, and corn syrup over medium heat. Stir until the sugar dissolves.
- Once the sugar has dissolved, stop stirring and let the mixture come to a boil. Use a candy thermometer to monitor the temperature until it reaches 310°F (155°C).
- While the sugar mixture is boiling, in another saucepan, melt the butter over low heat. Once melted, add the heavy cream and bring to a simmer.
- Once the sugar mixture reaches 310°F (155°C), carefully add the butter and cream mixture. Be cautious as the mixture will bubble up.
- Continue to cook the caramel until it reaches 248°F (120°C). Remove from heat and stir in the vanilla extract.
- Pour the hot caramel into a parchment-lined baking dish and let it cool at room temperature for several hours or until completely set.
- Once set, use a sharp knife to cut the caramel into small pieces. Wrap each piece in wax paper to prevent sticking.
