Harees (omani Spiced Rice Pudding)

Ingredients

  • 1 cup whole wheat grains
  • 1 cup basmati rice
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 6 cups water
  • Salt to taste

Instructions

  1. Wash the whole wheat grains and soak them in water for 2 hours.
  2. In a large pot, combine the soaked whole wheat grains, basmati rice, ground cardamom, ground cinnamon, ground nutmeg, ground cloves, and water.
  3. Bring the mixture to a boil, then reduce the heat and simmer for 1.5 to 2 hours, stirring occasionally, until the grains and rice are completely soft and the mixture has a porridge-like consistency.
  4. Season with salt to taste and continue to cook for another 10 minutes.
  5. Remove from heat and let it cool slightly before serving.
