Harees (slow-cooked Lamb Shoulder With Traditional Spices)
Harees is a traditional Emirati dish made with slow-cooked lamb shoulder and a blend of aromatic spices. This hearty and comforting dish is perfect for special occasions and gatherings.
Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 1 cup whole wheat grains
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- Salt to taste
- Water
Instructions
- In a large pot, combine the lamb shoulder, whole wheat grains, onion, garlic, cumin, coriander, cinnamon, and salt.
- Add enough water to cover the ingredients by 2 inches.
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 4 hours, stirring occasionally.
- Once the lamb and grains are tender and the mixture has thickened, remove from heat.
- Using a hand blender, blend the mixture until smooth and creamy.
- Adjust the seasoning if needed.
- Serve the harees hot, garnished with a drizzle of olive oil and a sprinkle of ground cinnamon.
