Harira (arabian Lamb And Chickpea Stew)
Harira is a traditional Arabian lamb and chickpea stew that is popular in Saudi Arabian cuisine. It is a hearty and flavorful dish that is often enjoyed during Ramadan and other special occasions.
Ingredients
- 1 lb lamb, cut into cubes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 6 cups chicken broth
- 1/2 cup lentils
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground black pepper
- Salt to taste
- 2 tablespoons olive oil
- 1 lemon, cut into wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb cubes and cook until browned on all sides.
- Add the chopped onion and garlic to the pot, and sauté until the onion is soft and translucent.
- Stir in the turmeric, cinnamon, ginger, and black pepper, and cook for another minute to toast the spices.
- Pour in the diced tomatoes, chickpeas, lentils, and chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, stirring occasionally.
- Stir in the chopped cilantro and parsley, and season with salt to taste.
- Serve the harira hot, with a wedge of lemon for squeezing over the stew.
