Ingredients

  • 1 lb lamb, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 6 cups chicken broth
  • 1/2 cup lentils
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • Salt to taste
  • 2 tablespoons olive oil
  • 1 lemon, cut into wedges for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb cubes and cook until browned on all sides.
  2. Add the chopped onion and garlic to the pot, and sauté until the onion is soft and translucent.
  3. Stir in the turmeric, cinnamon, ginger, and black pepper, and cook for another minute to toast the spices.
  4. Pour in the diced tomatoes, chickpeas, lentils, and chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, stirring occasionally.
  5. Stir in the chopped cilantro and parsley, and season with salt to taste.
  6. Serve the harira hot, with a wedge of lemon for squeezing over the stew.
