Ingredients
- 1 cup brown lentils
- 1 onion, chopped
- 3 tomatoes, diced

- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon

- 1/4 teaspoon saffron threads
- 6 cups vegetable broth

Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the lentils, tomatoes, cilantro, parsley, ginger, turmeric, cinnamon, black pepper, and saffron to the pot. Stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let the soup simmer for 45 minutes, or until the lentils are tender.
- Add the vermicelli to the pot and cook for an additional 10 minutes, or until the vermicelli is tender.
