Ingredients

  • 1 cup brown lentils

  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon saffron threads
  • 6 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the lentils, tomatoes, cilantro, parsley, ginger, turmeric, cinnamon, black pepper, and saffron to the pot. Stir to combine.
