Harissa (armenian Lentil Soup)
Harissa is a traditional Armenian lentil soup that is hearty, flavorful, and perfect for a comforting meal. This recipe combines simple ingredients to create a delicious and nutritious dish that is sure to warm you up on a cold day.
Ingredients
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, cumin, paprika, and cayenne pepper. Cook for another 2 minutes, stirring frequently.
- Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
- Serve hot, garnished with fresh parsley.
