Harissa (armenian Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Add the minced garlic, cumin, paprika, and cayenne pepper. Cook for another 2 minutes, stirring frequently.
  4. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
  7. Serve hot, garnished with fresh parsley.
