Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 1/2 cup rice
- 4 cups beef or chicken broth
- 2 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a bowl, mix the ground beef, chopped onion, rice, paprika, cumin, salt, and pepper. Form the mixture into small meatballs.
- In a large pot, bring the broth to a boil. Add the tomato paste and stir until dissolved.
- Gently drop the meatballs into the boiling broth. Reduce the heat and simmer for 30 minutes, or until the meatballs are cooked through and the rice is tender.
