Harissa Chicken Skewers

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 3 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 8-10 wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix the harissa paste, olive oil, cumin, smoked paprika, salt, and black pepper.
  2. Add the chicken cubes to the bowl and toss to coat them evenly with the harissa mixture. Marinate for at least 1 hour in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken, red onion, and bell peppers onto the soaked skewers.
  5. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are charred.
  6. Remove from the grill and let rest for a few minutes before serving.
