Ingredients

  • 1 cup forbidden rice
  • 2 lotus roots, peeled and sliced
  • 1 block firm tofu, cubed
  • 1 cup snap peas
  • 1 red bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 2 garlic cloves, minced
  • 4 green onions, chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Prepare the forbidden rice according to package instructions.
  2. In a large pan, heat the sesame oil over medium heat. Add the tofu and cook until golden brown on all sides. Remove from the pan and set aside.
  3. In the same pan, add the lotus root slices and cook for 5-7 minutes until tender. Remove from the pan and set aside.
  4. Add the snap peas and red bell pepper to the pan and cook for 3-4 minutes until slightly tender.
  5. In a small bowl, whisk together the soy sauce, rice vinegar, ginger, and garlic.
  6. Return the tofu and lotus root to the pan, then add the cooked forbidden rice and the soy sauce mixture. Stir well to combine and heat through.
  7. Divide the mixture into bowls and top with chopped green onions and sesame seeds. Serve hot and enjoy!
