Ingredients
- 1 cup forbidden rice
- 2 lotus roots, peeled and sliced
- 1 block firm tofu, cubed
- 1 cup snap peas
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 2 garlic cloves, minced
- 4 green onions, chopped
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- Prepare the forbidden rice according to package instructions.
- In a large pan, heat the sesame oil over medium heat. Add the tofu and cook until golden brown on all sides. Remove from the pan and set aside.
- In the same pan, add the lotus root slices and cook for 5-7 minutes until tender. Remove from the pan and set aside.
- Add the snap peas and red bell pepper to the pan and cook for 3-4 minutes until slightly tender.
- In a small bowl, whisk together the soy sauce, rice vinegar, ginger, and garlic.
- Return the tofu and lotus root to the pan, then add the cooked forbidden rice and the soy sauce mixture. Stir well to combine and heat through.
- Divide the mixture into bowls and top with chopped green onions and sesame seeds. Serve hot and enjoy!
