Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 cup dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 cups chicken broth
- 1/4 cup toasted pine nuts, for garnish
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the chicken thighs to the pot and brown them on all sides.
- Stir in the cumin, coriander, cinnamon, and nutmeg, and cook for a minute until fragrant.
- Add the soaked chickpeas and chicken broth to the pot. Season with salt and pepper.
- Cover the pot and simmer for about 1 hour, or until the chicken is tender and the chickpeas are cooked through.
- Adjust the seasoning if needed, then serve the Hashweh Djej hot, garnished with toasted pine nuts.
