Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups chicken broth
  • 1/4 cup toasted pine nuts, for garnish
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the chicken thighs to the pot and brown them on all sides.
  3. Stir in the cumin, coriander, cinnamon, and nutmeg, and cook for a minute until fragrant.
  4. Add the soaked chickpeas and chicken broth to the pot. Season with salt and pepper.
  5. Cover the pot and simmer for about 1 hour, or until the chicken is tender and the chickpeas are cooked through.
