Ingredients

  • 1 lb lamb, cubed
  • 1 cup cooked chickpeas
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups chicken or beef broth
  • 2 tablespoons olive oil
  • 1/4 cup toasted pine nuts for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the cubed lamb to the pot and brown on all sides, about 8-10 minutes.
  3. Stir in the minced garlic, cumin, coriander, cinnamon, nutmeg, allspice, and cayenne pepper. Cook for 2 minutes until fragrant.
  4. Pour in the broth and add the cooked chickpeas. Season with salt and pepper, then bring to a simmer.
  5. Cover the pot and let the stew simmer for 1.5 to 2 hours, until the lamb is tender and the flavors have melded together.
