Ingredients
- 1 lb lamb, cubed
- 1 cup cooked chickpeas
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups chicken or beef broth
- 2 tablespoons olive oil
- 1/4 cup toasted pine nuts for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the cubed lamb to the pot and brown on all sides, about 8-10 minutes.
- Stir in the minced garlic, cumin, coriander, cinnamon, nutmeg, allspice, and cayenne pepper. Cook for 2 minutes until fragrant.
- Pour in the broth and add the cooked chickpeas. Season with salt and pepper, then bring to a simmer.
- Cover the pot and let the stew simmer for 1.5 to 2 hours, until the lamb is tender and the flavors have melded together.
- Adjust the seasoning if needed, then serve the Hashweh Lahmeh hot, garnished with toasted pine nuts.
