Ingredients
- 500g plums, pitted and halved
- 200g all-purpose flour
- 150g unsalted butter, softened
- 150g granulated sugar
- 2 eggs
- 1 tsp almond extract
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp sliced almonds
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the almond extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the batter into the prepared pan and smooth the top. Arrange the plum halves, cut side up, on top of the batter. Sprinkle the sliced almonds over the plums.
- Bake in the preheated oven for 40-45 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.
