Hawaiian Huli Huli Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, garlic, ginger, sesame oil, and black pepper to make the marinade.
  2. Place the chicken breasts in a resealable plastic bag and pour in half of the marinade. Seal the bag and refrigerate for at least 2 hours, or overnight for best flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the used marinade.
  4. Grill the chicken for 6-7 minutes on each side, or until cooked through, basting with the reserved marinade during the last few minutes of grilling.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
