Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon sesame oil
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, garlic, ginger, sesame oil, and black pepper to make the marinade.
- Place the chicken breasts in a resealable plastic bag and pour in half of the marinade. Seal the bag and refrigerate for at least 2 hours, or overnight for best flavor.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the used marinade.
- Grill the chicken for 6-7 minutes on each side, or until cooked through, basting with the reserved marinade during the last few minutes of grilling.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
