Hawaiian Macadamia Nut Crusted Mahi Mahi

Ingredients
- 4 mahi mahi fillets
- 1 cup macadamia nuts, finely chopped
- 1/2 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow dish, combine the macadamia nuts, panko breadcrumbs, garlic powder, paprika, and a pinch of salt and pepper.
- Place the flour in another shallow dish.
- Dredge each mahi mahi fillet in the flour, then dip into the beaten eggs, and finally coat with the macadamia nut mixture, pressing gently to adhere.
- Heat the olive oil in a large ovenproof skillet over medium-high heat.
- Sear the mahi mahi fillets for 2-3 minutes on each side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the mahi mahi is cooked through and the crust is golden and crispy.
- Remove from the oven and let the mahi mahi rest for a few minutes before serving.
