Hawaiian Teriyaki Tofu Stir-fry
This Hawaiian Teriyaki Tofu Stir-Fry recipe is a delicious and healthy dish that combines the flavors of Polynesian cuisine with the goodness of tofu. It's a perfect meal for a quick and easy weeknight dinner.
Ingredients
- 1 block of firm tofu, drained and cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup pineapple chunks
- 1/2 cup teriyaki sauce
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Cooked rice, for serving
Instructions
- In a small bowl, whisk together the teriyaki sauce, soy sauce, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- Heat the remaining tablespoon of vegetable oil in the same skillet. Add the garlic and ginger, and sauté for 1 minute.
- Add the sliced bell peppers to the skillet and stir-fry for 3-4 minutes, until they start to soften.
- Add the pineapple chunks and cooked tofu back to the skillet. Pour the teriyaki sauce mixture over the tofu and vegetables. Cook for another 2-3 minutes, stirring constantly, until the sauce thickens and coats the tofu and vegetables.
- Serve the Hawaiian Teriyaki Tofu Stir-Fry over cooked rice and enjoy!
