Hazaragi Beef and Chickpea Curry (Qorma-e Gosht-o-Chana)

Ingredients

  • 1 lb beef, cut into cubes
  • 1 cup dried chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, sliced
  • 1/2 cup plain yogurt
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they are golden brown.
  2. Add the minced garlic, grated ginger, and green chilies. Cook for 2 minutes.
  3. Add the beef cubes and cook until they are browned on all sides.
  4. Stir in the diced tomatoes, ground coriander, ground cumin, turmeric, red chili powder, and salt. Cook for 5 minutes.
  5. Add the soaked chickpeas and enough water to cover the ingredients. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beef and chickpeas are tender.
  6. Stir in the plain yogurt and garam masala. Cook for an additional 5 minutes.
  7. Garnish with fresh cilantro and serve hot with rice or naan.
