Hazaragi Beef and Chickpea Stew (Qorma-e Gosht-o-Chana)
Qorma-e Gosht-o-Chana is a traditional Hazaragi beef and chickpea stew that is rich in flavor and hearty in texture. This dish is a staple in Hazaragi cuisine and is perfect for warming up during the colder months.
Ingredients
- 1 kg beef, cut into cubes
- 2 cups chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 2-inch piece ginger, grated
- 1/2 cup plain yogurt
- 2 tsp ground turmeric
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- Salt and pepper to taste
- 4 cups water
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.
- Add the beef cubes to the pot and brown them on all sides.
- Stir in the garlic, ginger, and spices, and cook for 2 minutes.
- Add the diced tomatoes and cook until they start to break down.
- Stir in the soaked chickpeas and water. Bring the stew to a boil, then reduce the heat to low and simmer for 2 hours, or until the beef and chickpeas are tender.
- Once the stew is cooked, stir in the plain yogurt and season with salt and pepper to taste.
- Serve the Qorma-e Gosht-o-Chana hot, accompanied by rice or naan bread.
