Hazaragi Beef and Chickpea Stew (Qorma-e Gosht-o-Chana)

Ingredients

  • 1 kg beef, cut into cubes
  • 2 cups chickpeas, soaked overnight
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2-inch piece ginger, grated
  • 1/2 cup plain yogurt
  • 2 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • Salt and pepper to taste
  • 4 cups water
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.
  2. Add the beef cubes to the pot and brown them on all sides.
  3. Stir in the garlic, ginger, and spices, and cook for 2 minutes.
  4. Add the diced tomatoes and cook until they start to break down.
  5. Stir in the soaked chickpeas and water. Bring the stew to a boil, then reduce the heat to low and simmer for 2 hours, or until the beef and chickpeas are tender.
  6. Once the stew is cooked, stir in the plain yogurt and season with salt and pepper to taste.
  7. Serve the Qorma-e Gosht-o-Chana hot, accompanied by rice or naan bread.
