Hazaragi Beef and Potato Curry (Qorma-e Gosht-o-Alu)

Ingredients

  • 1 lb beef, cut into cubes
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, finely chopped
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is golden brown.
  3. Add the beef cubes and cook until browned on all sides.
  4. Stir in the chopped tomatoes, yogurt, and all the spices. Cook for 5 minutes.
  5. Add the cubed potatoes and enough water to cover the meat and potatoes. Cover and simmer for 45-50 minutes, or until the meat is tender.
  6. Garnish with fresh cilantro and serve hot with naan or rice.
