Hazaragi Beef and Potato Curry (Qorma-e Gosht-o-Alu)

Ingredients
- 1 lb beef, cut into cubes
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, finely chopped
- 1/2 cup plain yogurt
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is golden brown.
- Add the beef cubes and cook until browned on all sides.
- Stir in the chopped tomatoes, yogurt, and all the spices. Cook for 5 minutes.
- Add the cubed potatoes and enough water to cover the meat and potatoes. Cover and simmer for 45-50 minutes, or until the meat is tender.
- Garnish with fresh cilantro and serve hot with naan or rice.
