Hazaragi Beef and Potato Stew (Qorma-e Gosht-o-Alu)
Qorma-e Gosht-o-Alu is a traditional Hazaragi beef and potato stew that is rich in flavor and perfect for a comforting meal. This hearty dish is a staple in Hazaragi cuisine and is often enjoyed with naan or rice.
Ingredients
- 1 kg beef, cut into cubes
- 4 large potatoes, peeled and cubed
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 cup yogurt
- 2 tbsp vegetable oil
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp red chili powder
- Salt to taste
- 4 cups water
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.
- Add the beef cubes to the pot and cook until browned on all sides.
- Stir in the garlic, ginger, and spices. Cook for 2 minutes.
- Add the chopped tomatoes and cook until they soften.
- Whisk the yogurt in a bowl and then gradually add it to the pot, stirring constantly.
- Pour in the water, cover the pot, and let the stew simmer for 45 minutes.
- Add the cubed potatoes to the pot and continue to cook for an additional 15 minutes or until the potatoes are tender.
- Season with salt to taste and serve hot.
