Hazaragi Beef and Spinach Curry (Qorma-e Gosht-o-Saag)

Ingredients

  • 1 lb (450g) beef, cut into cubes
  • 2 cups fresh spinach, chopped
  • 1 large onion, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 cups water

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.
  2. Add the minced garlic and grated ginger to the pot. Cook for a minute until fragrant.
  3. Add the beef cubes to the pot and cook until browned on all sides.
  4. Stir in the diced tomatoes, ground turmeric, ground coriander, ground cumin, red chili powder, and salt. Cook for 5 minutes.
  5. Whisk the plain yogurt in a bowl and then add it to the pot. Cook for another 5 minutes, stirring occasionally.
  6. Pour in the water, cover the pot, and simmer for 45 minutes or until the beef is tender.
  7. Add the chopped spinach to the pot and cook for an additional 5 minutes.
  8. Adjust the seasoning if needed and serve the Qorma-e Gosht-o-Saag hot with naan or rice.
