Hazaragi Beef and Spinach Stew (Qorma-e Gosht-o-Saag)

Ingredients

  • 1 lb beef, cut into cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chopped spinach
  • 1 cup water

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until golden brown.
  2. Add the minced garlic and cook for another 2 minutes.
  3. Add the beef cubes to the pot and brown them on all sides.
  4. Stir in the turmeric, coriander, cumin, cinnamon, cardamom, cloves, nutmeg, salt, and black pepper.
  5. Pour in the water and bring the stew to a boil. Then reduce the heat, cover the pot, and let it simmer for 45 minutes.
  6. Add the chopped spinach to the pot and cook for an additional 10 minutes.
  7. Adjust the seasoning if needed and serve the Qorma-e Gosht-o-Saag hot with rice or bread.
