Hazaragi Spiced Lamb and Lentil Curry (Qorma-e Gosht-o-Adas)

Ingredients

  • 1 lb lamb, cut into cubes
  • 1 cup lentils, rinsed
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, chopped
  • 1/2 cup plain yogurt
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 cup vegetable oil
  • Salt to taste
  • Water

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.
  2. Add the garlic, ginger, and green chilies. Sauté for 2 minutes.
  3. Add the lamb cubes and cook until browned on all sides.
  4. Stir in the diced tomatoes, ground coriander, cumin, turmeric, garam masala, cinnamon, and cardamom. Cook for 5 minutes.
  5. Whisk the yogurt and add it to the pot. Cook for another 5 minutes.
  6. Add the rinsed lentils and enough water to cover the ingredients. Season with salt.
  7. Cover the pot and simmer for 45-50 minutes, or until the lamb and lentils are tender.
  8. Adjust the seasoning if needed and serve hot.
