Hazaragi Spiced Lamb and Lentil Stew (Qorma-e Gosht-o-Adas)

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 cup brown lentils, rinsed
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, diced
  • 2 green chilies, chopped
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 cup vegetable oil
  • Salt to taste
  • 4 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onions and cook until golden brown.
  3. Add the minced garlic, grated ginger, and green chilies. Cook for 2 minutes.
  4. Add the lamb chunks and cook until browned on all sides.
  5. Stir in the ground turmeric, coriander, cumin, cinnamon, cardamom, and cloves. Cook for 2 minutes.
  6. Add the diced tomatoes and cook until they start to break down.
  7. Add the rinsed lentils, salt, and water. Bring to a boil, then reduce heat and simmer for 45-50 minutes, or until the lamb and lentils are tender.
  8. Adjust seasoning to taste and serve hot.
