Hazaragi Spiced Lamb and Lentil Stew (Qorma-e Gosht-o-Adas)
Qorma-e Gosht-o-Adas is a traditional Hazaragi spiced lamb and lentil stew that is rich in flavor and hearty in texture. This dish is a staple in Hazaragi cuisine and is perfect for warming up on a cold day.
Ingredients
- 1 lb lamb, cut into chunks
- 1 cup brown lentils, rinsed
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 2 green chilies, chopped
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 1/4 cup vegetable oil
- Salt to taste
- 4 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and cook until golden brown.
- Add the minced garlic, grated ginger, and green chilies. Cook for 2 minutes.
- Add the lamb chunks and cook until browned on all sides.
- Stir in the ground turmeric, coriander, cumin, cinnamon, cardamom, and cloves. Cook for 2 minutes.
- Add the diced tomatoes and cook until they start to break down.
- Add the rinsed lentils, salt, and water. Bring to a boil, then reduce heat and simmer for 45-50 minutes, or until the lamb and lentils are tender.
- Adjust seasoning to taste and serve hot.
