Hazaragi Spiced Lamb and Pumpkin Curry (Qorma-e Gosht-o-Kadoo)
Qorma-e Gosht-o-Kadoo is a traditional Hazaragi dish that combines tender lamb with sweet pumpkin in a rich and aromatic curry. This hearty and flavorful dish is perfect for a comforting family meal.
Ingredients
- 500g lamb, cut into cubes
- 2 cups diced pumpkin
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1/2 cup plain yogurt
- 2 tbsp vegetable oil
- 1 tsp ground turmeric
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp cayenne pepper
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until softened.
- Add the minced garlic and grated ginger to the pot, and cook for another 2 minutes.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the chopped tomatoes, ground turmeric, ground coriander, ground cumin, ground cinnamon, ground cardamom, cayenne pepper, and salt. Cook for 5 minutes.
- Reduce the heat, cover the pot, and let the lamb simmer for 30 minutes.
- Add the diced pumpkin and cook for an additional 20 minutes, or until the lamb and pumpkin are tender.
- Stir in the plain yogurt and cook for another 5 minutes.
- Garnish with fresh cilantro before serving.
