Hazaragi Spiced Lamb and Pumpkin Curry (Qorma-e Gosht-o-Kadoo)

Ingredients

  • 500g lamb, cut into cubes
  • 2 cups diced pumpkin
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until softened.
  2. Add the minced garlic and grated ginger to the pot, and cook for another 2 minutes.
  3. Add the lamb cubes to the pot and brown them on all sides.
  4. Stir in the chopped tomatoes, ground turmeric, ground coriander, ground cumin, ground cinnamon, ground cardamom, cayenne pepper, and salt. Cook for 5 minutes.
  5. Reduce the heat, cover the pot, and let the lamb simmer for 30 minutes.
  6. Add the diced pumpkin and cook for an additional 20 minutes, or until the lamb and pumpkin are tender.
  7. Stir in the plain yogurt and cook for another 5 minutes.
  8. Garnish with fresh cilantro before serving.
