Hazaragi Stuffed Bell Peppers (Dolma-e Filfil)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup cooked lentils
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup raisins
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the cooked rice, cooked lentils, chopped onion, diced tomatoes, raisins, mint, parsley, cumin, coriander, turmeric, salt, and pepper.
  4. Stuff the bell peppers with the rice and lentil mixture.
  5. Place the stuffed bell peppers in a baking dish and drizzle with olive oil.
  6. Pour the vegetable broth into the bottom of the baking dish.
  7. Cover the dish with foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender.
  9. Serve the stuffed bell peppers hot and enjoy!
